Vegan taco night, San Francisco style.
Big thanks to my friend Airykah and her awesome flatmates for letting me stay at their beautiful Castro home last month. This was by far one of the most delicious and fun vegan taco nights yet, the organic blue corn tortillas, all of the farmers market produce, and amazing women - such a lovely evening.

Collards, sweet potato, fresh lima beans, spicy okra, and yes those are gluten free fried green tomatoes. Mom and I really worked it out for this lunch.
Raw sweet corn salsa! Mom and I picked up this corn at a farm in north Georgia and it was some of the sweetest corn I have ever tasted.
As you all know I’ve been traveling a great deal since I started this blog. Followers often email me asking how I keep up with my healthy eating on the road. One thing I always do is bring some foods with me. I pretty much always have on hand some chia seeds and dehydrated nuts/seeds and depending on where I am fresh fruit and vegetables.
This photo was taken in my friend’s beautiful kitchen in the Castro neighborhood of San Francisco. If you live in that area and have not been to the Castro Farmers Market on Wednesday afternoons I highly recommend it. This was shot a couple of weeks ago and I got my hands on some delicious organic peaches (not nearly as good as the ones my Mom and I had in GA, but very tasty for CA). Each morning I had a bowl of chia seeds soaked in coconut milk kefir topped with lots of fruit. Wonderful way to begin the day!
